School starts next week for us. My husband won’t have his leisurely mornings five days a week, and our son will need to be at preschool every day, versus the three we’ve been sending him. Our morning routine can get hectic, and I know I’m not the first person to battle with time management and breakfast. To prepare for our morning time crunch, I’m using a new product, Quaker® Real Medleys® Yogurt Cups, in our breakfast routine.
The Quaker® Real Medleys® Yogurt Cups are dry ingredients that, after adding cold milk, turn into a tasty yogurt treat! The Real Medleys are a blend of yogurt and multigrain granola with real fruit and crunchy nuts. And with 25 grams of whole grains and 10 grams of protein with 1/2 cup of cold Skim Milk, they really are satisfying and delicious.
I found two of the three flavors they offer at Walmart, the Apple & Cinnamon and the Strawberry & Almond. Both are delicious, but I’m always interested in apple and cinnamon flavors.
The key for our family in the morning is to prepare as much in advance. I need as little to do as possible in order to get out of the house, but I also need to feed my family (and myself) food that is better for us and will keep us full for a while.
To compliment the Quaker Real Medleys and make things a little faster in my house (as if just adding milk wasn’t fast enough), I made applesauce pancake muffins. These can be made a night before, or on the weekend, and stored until you need one.
Applesauce Pancake muffins
Ingredients
- 2 cups pancake mix
- 1/4 cup sugar
- 1 tsp. cinnamon
- 1/2 cup applesauce
- 1/4 cup milk
- 1 egg
- 2 tbsp. oil
Instructions
Mix the ingredients. Pour batter into a lined muffin tin (fill each muffin about 1/2 to 3/4 full so they don't pour over the top.) Bake at 350 for 20 minutes.
I’m a fan of muffins and I do love pancakes. This combines two of my favorite breakfast items, and makes eating pancakes quick and easy! Plus, making them on the weekend ensures I can grab one and go on any given work day!
And just because I wanted a little more cinnamon in my life, I made cinnamon tortilla chips.
Cinnamon Tortilla Chips
Ingredients
- Tortilla shells
- Cinnamon
- Sugar
Instructions
I use a microwave chip tray to make mine. I sprinkle my shell with cinnamon, a little bit of sugar and cut the tortilla into triangles and microwave for a minute and 30 seconds. (You can skip the microwave and place your chips on a parchment paper lined baking sheet and bake at 350 degrees for about 10 minutes.)
I’ve found nothing like the Quaker Real Medley’s before and I love that they include real fruit and granola – and they’re very easy to prepare and eat when you’re in a hurry.
Crunchy. Cool. Yum.
