I’ve been searching for granola bar recipes lately. I wanted something I could make myself, that didn’t include a cup of sugar and had as few ingredients as possible. I finally figured something out. These bars are held together with ripe bananas. And they are so delicious.

What you need:

2 ripe bananas
1 cup of oats
2 tbsp. peanut butter
1/2 cup of a mix-in (think nuts, raisins, dried cranberries, or even chocolate chips)

For this batch I used chocolate chips and I didn’t use quite 1/2 of a cup.  You mix everything in a bowl. Just mash everything together until it’s a ball of the ingredients. Place in an 8×8 pan. (Place parchment paper in there, if you want as little mess as possible.) Spread the mixture in the 8×8 pan. Bake at 350 degrees for 15-20 minutes.

Note that these will NOT be hard. Mine are very soft, and I store them in a plastic ziploc bag. I cut the batch into 8 rectangles and I take one to work now so I have a chocolate fix in the afternoon.
