Easy Yogurt Breakfast Popsicles with Berries

Quick breakfasts are a must in our house. With three of my four family members having to leave by 7:15 to make it to school and work on time, we have very little time to enjoy a leisurely breakfast in the morning. My kids (especially my daughter) like to change things up day to day, and I enjoy giving them options, so these yogurt breakfast popsicles are a great addition to the breakfast lineup.

My daughter LOVES fruit and yogurt. Both of my kids love popsicles. My son will eat these yogurt breakfast popsicles (despite claiming he doesn’t like yogurt.) Frozen yogurt is different in his mind.

What you need for berry yogurt breakfast popsicles:

1 cup Greek vanilla yogurt
1/2 cup milk
2 Tablespoons honey, divided
1 teaspoon vanilla extract
7-8 strawberries – diced
1/2 cup blueberries
1/2 cup granola
popsicle mold

How to make berry yogurt breakfast popsicles:

  • Add the yogurt, milk, 1 Tablespoon honey and vanilla into a medium mixing bowl.  Stir well to combine the ingredients.
  • Place 2-3 strawberry pieces into the bottom of each ice pop mold.
  • Add the yogurt mixture to each of the ice pop molds, filling each mold halfway.
  • Drop 5-6 blueberries and a few more strawberry pieces into each mold.  Cover with additional yogurt up to the top of each mold, leaving about 1/2 inch space.
  • Insert the wooden sticks into each mold and freeze for 30 minutes.
  • Drizzle 1 Tablespoon of honey over the granola and toss to coat.
  • Spoon the coated granola into the top of each chilled ice pop mold, pressing down firmly.
  • Freeze overnight or for at least 4 hours.

Are popsicles good for breakfast?

Not all popsicles are created equal, but these berry yogurt popsicles would be great for breakfast!

Can yogurt be frozen for popsicles?

Yogurt CAN be frozen for popsicles! It takes a few hours, so I would recommend freezing it overnight so it is ready to enjoy in the morning.

What can I use instead of popsicle molds?

If you do not have ice pop molds, this recipe would work using disposable paper cups and wooden popsicle sticks.
