Chocolate Shortbread Hearts Cookies

When I was in college, I was very much into celebrating anti-Valentine’s Day with students in my dorm. There were always cookies and movies with the girls and I had the best time. (Even the year I had a boyfriend, I celebrated with my friends. As an RA and later the Resident Director of the dorm, this was one of the best times we had together.) Basically, I love cookies. And I love an excuse to make them.

Now that I have a husband and kids, I still like to make Valentine’s Day special for them. My kids love treats and I’m all about making things special during a pandemic. These Chocolate Shortbread Heart cookies are really cute and such a fun treat!

What you need for Chocolate Shortbread Hearts:

How to make chocolate shortbread hearts

  • Preheat oven to 350 degrees and line two cookie sheets with silicone mats (I have similar mats!)
  • Using a large bowl, whisk together the flour, cocoa and salt.
  • Using another large bowl, beat together the butter and sugar until light and fluffy.
  • Beat in the vanilla until combined.
  • Gradually beat in the dry ingredients.
  • On wax paper, roll the cookie dough to about a quarter inch thick.
  • Using a heart shaped cookie cutter, cut out heart cookies.
  • Place cookies onto the cookie sheets and bake for 14 minutes.
  • Allow to cool

Decorate:

  • Using a microwave bowl, melt the chocolate wafers – I like to melt them in 30 second increments, stirring each time (and not overcooking them.)
  • Scoop into the piping bag and cut the very edge of the tip of the bag so you don’t have too much coming out at once.
  • Drizzle the melted chocolate over the heart cookies and sprinkle red sanding sugar and heart confetti sprinkles over the chocolate.
  • Allow the chocolate to harden.
  • Enjoy!
