I’m continuing the Valentine’s Day theme and sharing Cookie Bars (with M&Ms!) Not quite a cake, not quite a brownie, but totally a cookie and delicious.
Even if you aren’t able to make this for this Valentine’s Day, go ahead and pin it for next year!
I think these Cookie Bars with M&Ms would be great as a class treat.
Cookie Bar Recipe
Ingredients for the bars:
- 1 cup butter
- 2 cups sugar
- 4 eggs
- 2 teaspoon vanilla
- 5 cups flour
- 1/2 teaspoon baking soda
- 1 cup of Valentine M&Ms
Frosting Ingredients:
- 1 cup unsalted butter, softened
- 3 cups powdered sugar
- 2-3 tablespoon heavy whipping cream
- 1 teaspoon vanilla
- 1-2 drops of light pink food coloring
- sprinkles
Ingredients for the bars:
- 1 cup butter
- 2 cups sugar
- 4 eggs
- 2 teaspoon vanilla
- 5 cups flour
- 1/2 teaspoon baking soda
- 1 cup of Valentine M&Ms
Frosting Ingredients:
- 1 cup unsalted butter, softened
- 3 cups powdered sugar
- 2-3 tablespoon heavy whipping cream
- 1 teaspoon vanilla
- 1-2 drops of light pink food coloring
- sprinkles
Instructions:
Cream butter and sugar until combined. Mix in the eggs and vanilla.
Mix the flour and baking soda together in a separate bowl. Mix in the dry ingredients gradually until fully combined. Mix in the red m&m’s. Spread the mix on a cookie sheet covered with parchment paper.
Bake at 375 degrees for 10-15 min or until toothpick comes out clean. (Do not overbake!) Once baked, set aside to cool down.
While cookie bar cools, start on the frosting!
Beat the butter on medium speed until smooth. Add in the powdered sugar and mix on low speed at first, then increase to medium speed until mixture starts to come together.
Add in the heavy cream, vanilla extract, food coloring and salt and continue mixing on medium-high speed for another minute or until everything is well combined, scraping down sides of bowl as needed.
Once the bar is cooled and frosting is made, frost the cookie bar till totally covered.
Top with sprinkles, then serve and enjoy! You can cut into smaller squares for treats (making the bars go just a little further if you are serving a classroom.)
