Recipe: Crunchy Macaroni & Cheese

One of my son’s favorite meals is crunchy macaroni and cheese. (It’s a baked mac and cheese recipe my mom made when I was a kid, and I’ve since passed along this comfort food to my family.) If you ask my son to choose something for dinner, this is usually one of the first things he mentions (his top three items are hot dogs, hamburgers and crunchy macaroni and cheese.) 

I love this dish because it will feed the family for a couple of meals. The one thing I’m not a fan of is the clean up. Because it is baked, some pieces will stick to the dish. The dish I use actually has a cover so I can pop it back into the fridge for the next day without having to dirty even more dishes. Clean up has become a little simpler, though, with the help of Scotch-Brite® Non-Scratch Scrub Dots Dishwand and sponges.

So this recipe, while simple to make it does require some baking time (45 minutes.) I often have the ingredients on hand, and it’s easy to whip it up for dinner mid-week. 

Ingredients:
1 box (16 oz.) elbow macaroni
1 block of cheddar cheese (shredded)
1/2 cup of milk
2 eggs
paprika
salt & pepper to taste

Directions:
1. Preheat your oven to 350 degrees. Cook your elbow macaroni according to the directions on the package. 
2. In a small bowl, beat the eggs and milk together. 
3. When the noodles are finished and drained, put them in your baking dish. Pour the milk & eggs combination over the noodles, and then mix the shredded cheese in with the noodles. 
4. Sprinkle paprika across the top (this is going to give the dish a super crunchy texture that my son loves.) (You can also add salt or pepper to the top, if you think you’ll prefer that. I tend to season with pepper later.) 
5. Bake for 40-45 minutes.

And the results are pretty fantastic.

It’s the perfect comfort food (and I feel like fall and winter is the epitome of comfort food!) But like I mentioned before, cleaning my white dish can be all types of headaches – until I tried the Scotch-Brite® Scrub Dots sponges and dishwands, which I found at Target.

And cleaning was simple! After a few days, the leftover macaroni was really stuck to the dish. Within in a few minutes, I had all traces gone with the help of the Scotch-Brite® Non-Scratch Scrub Dots Dishwand.
