cupcakes, cupcakes, cupcakes!

I made almost two dozen cupcakes last night and I’m so excited that I had to share the recipe with you.

1 box cake mix (I used chocolate)
1 can of Diet Dr. Pepper (I used most of a small bottle, and drank the rest.)

That’s it. Bake at the temperature suggested on the box. I baked mine for slightly less than the time on the box (just a minute less) and they are ohsoyummy!

I learned this cake trick back when I was in Weight Watchers. Way back in the day….I’m actually a Lifetime member who has somewhat fallen off the WW wagon. I’m trying to get back on, and I’ve been wanting chocolate cake in the house for a while. And this recipe is pretty close to perfection.

Oh, and I’m hoping this will help me get past my yearning for Girl Scout cookies. Stupid, stupid cookies.

  1. oh yeah, still on my list to try next time I need to bake a cake. I saw some diet cherry 7up and thought it might be good with a cherry chip or something!

  2. That’s exactly it – replace the oil/butter/water/whatever the recipe calls for with a can of diet Dr. Pepper. If you’re using a yellow cake mix, I highly recommend diet Sunkist.

    The cupcakes came out better than the cake normally does for me. They’re really moist and fluffy. I LOVE them.
