Olive oil is a staple in our kitchen. When we need oil for cooking, 90% of the time we are reaching for 100% Italian Extra Virgin Olive oil. It’s so versatile, which I love.

Also a staple in our kitchen? Chicken. All things chicken. At some point in the past year, we’ve started having a roast chicken with vegetables multiple times in a month. Some months, we have this meal weekly. My husband normally is in charge of the roast chicken, but I’ve tried it a few times myself – and succeeded!

Easiest roast chicken with vegetables - olive oil will help make the skin crispy and the vegetables tasty.

The key to having a crisp roast chicken? I believe it’s the olive oil.

Fun fact: Did you know 100% Italian Extra Virgin Olive oil should be stored in a dark, cool place and not next to the stove or on your counter? And never in the refrigerator. I didn’t know these things – but we already have ours stored in a cabinet that isn’t close to the stove.

Since meat was at a premium in our area a year ago, I now make sure our freezer is well stocked. We always have a whole chicken (or three!) ready to go. From there, I look at what vegetables we might have on hand. Carrots, potatoes, onions are often used because we want to use them before they possibly go bad. (Also, roasted potatoes are one of my favorite things ever.) Sometimes I’ll add celery.

I cover the with 100% Italian Extra Virgin Olive oil and rub rosemary, salt and pepper into the skin. The vegetables are drizzled with olive oil and the chicken is set on top of the bed of vegetables.

What Vegetables go well with Roast Chicken?

My go-to vegetables are carrots, potatoes and onions – drizzled with olive oil. Celery is great too. If you like roasted tomatoes, you can toss some in. And occasionally we’ve used parsnips.

How do you make Roast Chicken with Vegetables?

It’s so easy!

Ingredients:

  • 1 whole chicken
  • 1 onion (cut into chunks)
  • 5-6 red potatoes, chopped
  • Baby carrots (I used about 12 ounces)
  • 100% Italian Extra Virgin Olive oil
  • Rosemary
  • sea salt and pepper

How to make the chicken:

Preheat your oven to 425 degrees. In a roast pan, mix your vegetables on the bottom and drizzle with 100% Italian Extra Virgin Olive oil. Sprinkle salt and pepper over the vegetables. Rub 100% Italian Extra Virgin Olive oil all over your chicken, then season with rosemary, salt and pepper. Place the chicken on top of the vegetables. Bake at 425 for 10 minutes. Then turn the temperature of your oven to 375 and continue baking for an hour. Check after that hour to be sure the chicken is fully cooked. I tend to cook mine for an hour to an hour and 15 minutes.
