eat-in challenge, week 3
We’ve started the third week of our eat-in challenge, and still….so far, so good!
This week was my week to buy groceries. Remember….my husband and I alternate weeks. I managed to stock up on some items for lunch (microwave lunches) for the next two weeks, and everything else we needed for dinners that will consist of hamburgers, chili, chicken and vegetables. I even bought a bag of bananas that were “ripe” for only $1.50 – I got about four times the amount of bananas that I really needed, and there are five trays currently dehydrating to make banana chips.
My only complaint about grocery shopping? I bought a bag of apples at Wal-Mart and when I got them home, I realized that most were pretty bruised and/or on the verge of going bad. I cut those up quickly (disposing of the bad spots) and made banana chips. I bought separate (more expensive) apples for the husband to eat.
Between eating in all month and all of the dehydrating I’ve been doing, our compost bin has been filling up! And my wallet isn’t doing too bad either. 🙂 This week’s groceries came to $68 and I plan on spending about $10 more to stock up on some meat (I really didn’t have to buy meat, and it’s on sale…figure I can save money and be a little better prepared for next week or in case we change our mind on our menu.)
If I stick to the challenge, I’ll save roughly $70 out of this week’s food budget. I saved $50 from two weeks ago…and $120 isn’t too bad for a total savings in one month! (Oh and I’m saving the money for Hawaii. I figure I’ll try to eat in most of February too…)

We’re having problems with apples, too. We bought individual apples the other day and THOSE apples were soft and brown when sliced. Uncle Al thinks it’s more like cooler burn. Hope yours are better…….

I love this challenge! We generally eat in since I quit working, but I’ll admit to the occasional take-out Chinese or pizza. Saving $ for Hawaii sounds like a great reason, too!
