Spinach & Bacon Loaded Potatoes from eMeals – and a giveaway!

School has been back in session for over a month in my area, and my busy time of the year is RIGHT NOW. I feel frantic at most times, and when it came time to meal plan this week, I just didn’t think I could bring myself to do it.

Enter eMeals. I’m using a few of their recipes this coming week, and I had most ingredients on hand. (After selecting my meals from my backlog of weekly plans that I have been storing away, it took me about 15 minutes to come up with my shopping list – and 30 minutes later I was already home from the grocery store.)

eMeals recently introduced a new weekly plan – 30 minute meals. This is perfect for my family! I get home from work at 5:30 (sometimes 5:29) and I’m so excited to have dinner on the table around 6 p.m. instead of much later.

This week’s plan also includes a slow cooker recipe for spinach and bacon loaded potatoes. Do you REALIZE how amazing those sound? And healthy? And kid-friendly? And fast? (Well, fast because you’re placing everything in the slow cooker.)

And because I’m super excited about this plan and the recipe, I’ll even share it with you. (In the meal plan, the potatoes are paired with a side salad.)

Spinach & Bacon Loaded Potatoes

Spinach & Bacon Loaded Potatoes
Prep Time 10 minutes
Cook Time 7 hours
Total Time 7 hours 10 minutes

Ingredients

  • 6 medium-size baking potatoes
  • 2 tablespoons olive oil
  • ¼ cup butter
  • 1 (5-oz) bag baby spinach
  • 1 (2.5-oz) package real bacon pieces
  • 2 cups shredded Cheddar cheese
  • ½ cup chopped green onions

Instructions

    Rub potatoes with oil; wrap individually in foil.
    Place potatoes in a 5- to 7-quart slow cooker.
    Cover and cook on Low 7 to 8 hours or until potatoes are tender. Split potatoes lengthwise;
    fluff with a fork. Divide butter, spinach, bacon and cheese among potatoes. Top with green onions. Season with salt and pepper to taste.

  1. This sounds like a great lunch or light dinner! I love emeals, it’s such a convenience to have menus pre-planned for me.

    1. Bacon changes everything. Yesterday I gave Lucas bacon for dinner and he said, “bacon is for oatmeal!” He didn’t want to eat it. I don’t know who he belongs to.

  2. Time is my biggest issue during the week, so I try to prep meals during the day and have everything ready to just pop in the oven when I pick the kids up after school! I try to make homemade, full meals 6 nights a week! I’ve heard such great things about emeals too! It’s wonderful!

  3. our biggest challenge is coming up with variety when I have pick eater kids. Their aversion is texture, more than anything. So it’s hard to come up with something that appeases everyone.

  4. The biggest dinner challenge my family faces is getting into a funk where I feel like I am stuck in a recipe rut. I try to change things up frequently and experiment more. But there are nights that I am just too exhausted and I have no time or energy to prepare a big fancy meal.

    1. Easy and not time-consuming are always goals of mine. I do not have the mental strength at 5:30 p.m. to fix a gourmet meal that is going to take HOURS!
