Green Hummus Recipe – Using Kale!

A few years ago, I had an abundance of basil and I came across a hummus recipe that I ended up tweaking and using a lot over the summer. (Check out the tweaked basil hummus recipe.) This summer and fall, I’m planning on making hummus using kale! Kale is an easy leafy green to grow and it thrives in cooler temps, making this recipe a great spring and fall recipe (and summer if you are able to keep those greens growing in warmer temps.)

Benefits of Kale

Kale is nutrient-dense and loaded with antioxidants. I started growing it a few years ago when I wanted kale chips were all the rage. (I made some. They really are great.) Kale is good cooked or raw, and I’m working every angle to get my kids eating it.

Fall Gardening for Kale?

If you’ve followed my site or my Instagram posts, you know we’ve grown a garden for the past 11 summers. I have tried fall gardening, and have had mild success with it, but only because I didn’t devote as much time to harvesting what I had planted. Since our weather is beginning to cool off, I’m planning to get my kids out in the garden with me to grow more lettuce and kale. (I let my lettuce die off in June when temps started getting too hot to really manage it.) I also have some extra basil plants I am hoping to harvest for a few freezer dinners and pesto.

This green hummus recipe is easy to make - and a way to use the kale you have that you don't want to make into chips or throw away! It's a healthy dip that your family will love.

Ingredients for Green Hummus

  • 1/2 cup tahini
  • 1 clove garlic
  • 1 lemon, juiced
  • 4 tablespoons olive oil
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1.5 cups packed kale (grab seeds to grow your own!)
  • 2 cups cooked chickpeas
  • 2 tablespoons water
  • 1 tablespoon chives

Directions for making Green Hummus

  • In a blender or a food processor (or a Vitamix!), add the garlic, lemon juice, olive oil, onion powder, cumin and salt.
  • Blend until combined.
  • Add in the kale, chives and chickpeas.
  • Begin to blend on low. If using a blender, you will need a tamper to keep it going.
  • Add the water to help blend completely.
  • Blend until everything is combined.

Makes 1.5 cups

Yield: 1.5 cups

Hummus with kale can be made easily in the fall if you're growing your own kale.

Prep Time 10 minutes
Cook Time 5 minutes
Total Time 15 minutes
