Recipe: Honey Lime Berry Salsa

Round out your summer with this simple Honey Lime Berry Salsa recipe! 

I love fruit, and I love a good salsa recipe. So why not make a fruit salsa? My kids are big fans of strawberries and blueberries, too. Most summers, we have an overabundance of blueberries. For some reason, we didn’t pick any this summer, which is our loss. My mom has so many in her backyard in late June and early July! Despite not picking our own blueberries, we’ve bought many pints of blueberries – and many more pounds of strawberries! – this summer. This berry salsa is the perfect compliment to our summer dinners. 

(If you aren’t a fan of cilantro, you can definitely omit that from the recipe. )

Ingredients:

  • 1 1/2 cups strawberries, quartered
  • 1 1/2 cups blueberries
  • 1 ½ tbsp lime juice
  • 2 tbsp honey
  • 2 tbsp cilantro, roughly chopped

Directions:

In a large bowl, combine your strawberries, blueberries and cilantro. Pour lime juice and honey over the berries. Gently toss to mix. Chill, covered, in the refrigerator for one hour. Enjoy!

This would make a fun appetizer or snack. Serve with crackers (even graham crackers) if you want something a little more extra.
