ice day…and "baking"

I need to just accept the fact that we may not have a real snow day this year. We did, however, get a little bit of ice today. That was enough to call schools off (with good reason – roads were slick) and keep me home (working from my dining room table.)

And since I was so close to the kitchen, I decided today would be a good day to break out the breadmaker my dad and stepmom gave us. (It’s used, and I had to find an instruction manual online, so I have never actually taken the time to use it.) I am in the process of making a honey wheat bread. I really hope it turns out well. Oh, I used the term baking loosely in the title of this post because all I had to do was throw ingredients into a bowl and press a couple of buttons. Nothing more. Seems too simple.

Soon I’ll work on meatballs for our spaghetti and meatballs. I was too busy last night to make them ahead of time, and the kiddo LOVES meatballs. Seeing how he’s been somewhat picky this week, I need to make something I know he’ll love.

I do believe this ice day has forced me to make comfort foods. If we weren’t trying to get the kid to nap right now, I’d probably bust out the mixer to make banana bread. Can we say carbs?

Now if only I didn’t have to work today. (No worries. I started working before 7 a.m., so I think I’m done for the day.)
