I’ve been considering doing a month of meal planning. Have you ever done anything like this? Or planned out more than one week at a time? Obviously we wouldn’t grocery shop for the month all at once (milk, eggs, produce are all bought on a weekly basis.) I just wonder if I’d be able to stick with a month of meal planning – or relatively close.
I feel like we stress out too much on Saturdays trying to come up with a different menu for the next week. I’m a creature of habit and I don’t mind cooking the same meals over and over. My husband is not similar in that aspect.
Our garden has been hit or miss this summer. The over abundance of rain has done a number on my tomatoes. I don’t have as many as I normally would have (and they’re just starting to ripen.) My zucchini was taken out by squash bores. Awful, awful squash bores. I’ve managed to save my butternut squash (for the moment) and I’ve had a ton of cucumbers. How many meals can you make with cucumbers? We’re finding out the hard way. And eating a lot of sliced cucumbers with meals.
For this week, our menu looks a little like this:
Sunday – roasted chicken with vegetables and potatoes.
Monday – leftovers (we have a lot of random food in our refrigerator – mac and cheese, hot dogs, fish.)
Tuesday – Salad with chicken
Wednesday – Pork spiedies
Thursday – (I can’t remember.)
Friday – Hot dogs (this will be on our menu for a long time, as my husband bought a case of hot dogs at Sam’s Club.)
And next week, I’m considering challenging myself to create a menu with mostly foods we already have stockpiled. (Stockpiled sounds terrible, but we have a lot of food and it would be good to use what we have – with the exception of produce that we need, milk, eggs, etc.)
