meal planning – back in the (working) swing of things
Tomorrow I head back to the workforce. It’s been 14 weeks and I’m a little nervous about everything being taken care of and still seeing the family for more than an hour a day, but it’ll work out. (The nerves stem from the fact that I’m going to have a much longer commute. Overall, it’s going to work out.)
So tonight, I share with you our menu for the week.
Sunday – Salmon packets. I should have taken a photo of these. They were so great. I took one to my mom for dinner and she even commented on how good it was! Oh and they are salmon with couscous, cranberries, pistachios baked in aluminum foil as individual packets.
Monday – Vegetable beef stew in the crockpot. I have already prepped this, so I just have to pull it from the fridge in the morning, set it on the crockpot base and be done.
Tuesday – Soup and grilled cheese sandwiches. (The toddler likes grilled cheese, and is almost guaranteed to eat the same dinner as we eat this night.)
Wednesday – Grilled chicken, steamed vegetables. Chicken was on sale over a week ago so we stocked up!
Thursday – Homemade macaroni and cheese. Again, the toddler will eat this, which makes me happy.
Friday – Pizza. Maybe we’ll go out?
Saturday – The toddler will have something specific for him. The husband and I are going out to two Christmas parties! So we’ll eat at the parties.
