meal planning and continuing the Eat in Month challenge #eatinmonth

We’re starting another week and the weather looks to be a bit more promising (no below zero temps in the forecast.) The Eat in Month challenge continues to be a success for us, and I was definitely presented with a challenge.

menumonday_eatinmonth On Wednesday, my co-workers were set to go out for lunch to celebrate one person’s birthday. (I had forgotten about this celebration until Tuesday, but figured it would be my cheat day.) When I got to work, 30 minutes from home and with no prepared lunch, I was told we were postponing the lunch. Sigh. I figured I’d be eating in the cafeteria, only to remember that it was closed until students came back to campus. I ended up going to the grocery store about half a mile from campus, and picking up a Lean Cuisine meal. It was on sale for $2 and counted since it was from the grocery store and not a drive-thru window. (I almost walked to the grocery store to get in some exercise for the day, but it was still hovering around 15 degrees and I just couldn’t bring myself to walk in those temperatures.)

Some of the meals we made last week were bland, at best. I’ve also been trying to do more bento meals for the toddler, and the sandwiches have been kind of failing me. And him. He won’t eat the crazy faces I’ve been cutting out. I may end up doing a post on my bento fails.

So this week, we’re hoping for a little more (and for the meals to be more filling and tasty.)

Sunday – pork loin and brussels sprouts.

Monday – Salmon/couscous packets? I question this because what we had on the menu for that evening is actually what we ate for lunch on Sunday.

Tuesday – Salad with chicken. (The salad is lettuce, grape tomatoes, dried cranberries, sliced almonds, a little cheese and topped with a balsamic vinaigrette dressing. The recipe for the dressing is posted here and itā€™s from the Tupelo Honey cookbook.)

Wednesday – White chicken chili

Thursday – Meatloaf. We had so many leftovers last week, that this just remained in the freezer and we ate leftovers for dinner one night (and for almost every lunch.)

Friday – Grilled chicken and butternut squash risotto (from Trader Joe’s.)

Saturday – Frozen pizza. This may change as my in-laws are possibly visiting and we’re not sure if they’d be up for some frozen pizza.

  2. I’m going to do an #eatinmonth in February. So glad to see you have plenty of leftovers!! I put together a full month plan but I was a little worried. Great job picking up the LEan Cuisine. It’s so hard when things aren’t as planned to keep eating in!
