meal planning – and more grilling (and cinco de mayo recipes)

Isn’t it fun to have on your menu “something grilled”? Just me? (I know it is not just me.) The weather has been consistently nice and before I left for the grocery store, I made out our menu and really did include “something grilled” and then I had a time finding what meat I wanted to grill. (I ended up with steak. An easy option.)

(Let’s call this Menu Planning Monday, even though it’s Sunday.)

For the rest of the week, it’s a little tricky. I have so many meetings and events this week and I am trying hard to make sure we have easy items, but new things too. (My husband loves trying new recipes. I’m a safe kind of girl.) OH. And our toddler is eating red meat again! Score huge points for us!

Sunday – Burgers on the grill. We’ll use English muffins, rather than buns (just a little lower in calories, I believe) and adding salad as a side. My grandma’s lettuce is abundant, so I’m swinging by there in a bit to pick some.

Monday – Tacos. I couldn’t let cinco de mayo pass without having Mexican food, right? So tacos it shall be.

Tuesday – Lemon basil chicken. This is a recipe from the eMeals low fat family plan. I’m really excited to try it.

Wednesday – Ranch pork chops (in the slow cooker.) This is another recipe from eMeals (the same low fat family plan.) I really scored with this menu, I think. I’ve found a lot of great recipes.

Thursday – Grilled chicken and salad.

Friday – Pizza

Saturday is open. I have to be at graduation that day and host a graduate reception following graduation. We also have a graduation party (different college) we’ve been invited to AND I have plans to go to a movie that night. SO many things to do!

And before I wrap this up, eMeals has provided a cinco de mayo recipes and grocery list for readers. The following is an avocado dip that I’m tempted to try this afternoon.

Avocado Dip

Ingredients

  • 2 large ripe avocados, peeled and seeded
  • 1 T lemon juice
  • ¼ small onion, finely chopped
  • 1 small tomato, finely chopped, without skin and seeds
  • (1 t salt)
  • 4 T sour cream
  • 1 T jalapeño pepper, finely chopped
  • 1 T fresh cilantro, finely chopped
  • Tortilla chips

Instructions

    Mash avocados with a fork.

    Add lemon juice, onion, tomato, salt and sour cream.

    Stir in jalapeño pepper and cilantro.

    Serve with tortilla chips.
