meal planning Monday – eating in next month!

I’m home all this week, my brother is in town and the husband and I have decided to do the eat-in challenge again in January. This week’s menu is kind of a mixed bag because we’ll likely eat out once or twice before Wednesday and then we’re saving money and calories by meal planning the entire month of January! (But more on eat-in month later.)

Sunday – Spaghetti (dinner with the family.)

Monday – Filet Mignon. A Weight Watchers recipe! I’m really excited to try this out.

Tuesday – Gnocchi and steamed vegetables. We bought the gnocchi and a spice at Sam’s Club after they were doing a tasting there a couple of weeks ago. I’m excited to try it out, see if the toddler will eat it, and share it with the world if all goes well!

Wednesday – Raspberry mustard glazed ham (another Weight Watchers recipe – we’ve tried this one and it’s SO GOOD.) My mom mentioned making a black eyed pea salsa she saw on Rachel Ray’s show. And greens.

Thursday – Sweet and sour chicken thighs – a slow cooker recipe that was part of my eMeals subscription.

Friday – pork chops. We found two random pork chops in the freezer, so we’re going to use them up. (It’s rare that we have two and not four.)

Saturday – Tilapia with pecans and mustard on top. I’m not normally a fan of mustard, but I do like this meal. As soon as I have an actual recipe, I promise to share it. The husband generally makes this one.
