meal planning Monday – mixing it up with two new recipes
It’s a new week and therefore a new menu must be planned. I have to admit that I have dragged my feet all weekend to come up with a menu. I haven’t grocery shopped yet, and will probably do so on Monday (along with several other torturous errands.) Oh, and I’m linking up with OrgJunkie this week.
Sunday – Chicken marsala. My husband went with a Weight Watchers recipe. I did not eat the mushrooms. The sauce was fairly good and it didn’t take too long to cook. We paired it with a side salad. Since I’m not a mushroom eater, I normally don’t eat chicken marsala.
Monday – Birthday celebration for me! We’re going out for dinner. Reservations are already made.
Tuesday – Meatloaf for the husband. I cooked this a few weeks ago and I actually have an event on Tuesday so I won’t be home until late. I also have a ginormous butternut squash that I may attempt to bake and/or make squash fries with (think sweet potato fries…but with squash.)
Wednesday – Garlic roasted pork tenderloin in the slow cooker. I have a subscription for eMeals and while I’m not using their entire week’s worth of recipes, I wanted to try this one. (And a review of eMeals will be coming soon!)
Thursday – A late birthday celebration for me (and a friend!) The kiddo will have something easy like grilled cheese.
Friday – Pumpkin pancakes for dinner. These are so filling, and tend to make a lot, so we’re inviting friends over.
Saturday – Pizza. We have several frozen pizzas (including a pesto pizza from Trader Joe’s – TJs just opened in Asheville!)
