menu Monday – bison, pot pie and more!

This was my husband’s week to do the grocery shopping, and I let him come up with a couple of meals on his own. We tend to compromise on meals (he doesn’t love pesto. I don’t love any type of sausage. But we eat it at times, just to please the other person.) So I trusted him on our menu this week….especially because I had cranky toddler boy and I was trying to get out of the house with the boy. quickly.

Sunday – Chicken Pot Pie (it was a Weight Watchers recipe, and one that will be used many times in the future!)

Monday – Bison kabobs. (Just bison cubes, peppers, tomatoes, onions – grilled on the George Foreman grill.)

Tuesday – grilled cheese sandwiches, soup.

Wednesday – Grilled chicken and vegetables.

Thursday – Vegetarian chili (Another Weight Watchers recipe)

Friday – Spaghetti (and probably meatballs, instead of meat in the sauce.)

Saturday – Open

And…notes.

The chicken pot pie really was great. It took a while to prepare and cook (like an hour or so), but it made 6 servings and the leftovers were even great. 

The bison kabobs were a random add this week. We had the bison in the freezer, and the husband is trying to work on his frugal-ness this year. So he’s using what we had. We like bison. It’s lower in fat, and it can be quite tasty. And it’s different from our normal chicken meal.

I’ll skip the grilled cheese, if I’m still congested. Dairy doesn’t help congestion. I’ll also figure out something different for the boy if he’s still congested (though he loves cheese, and it’s hurting me to deprive him of cheese. I just know it’s best right now.) 

The vegetarian chili is new to us, but it sounded good, so we’re going to try it. I’ll probably make meatballs before Friday, so we have them to mix in with the spaghetti. I like meatballs more than just meat in the sauce. The kiddo also loves meatballs (rather than the straight beef) so I’ll do whatever he prefers, to make sure he’s eating enough (and not getting a ton of junk.)
