menu Monday – busy week.
We’re coming off a very busy weekend that involved a lot of great (read: not very healthy) food. It even involved cake. Oh the cake….and there is still leftover cake. Oh my.
This isn’t our most exciting menu, but it’s still planned out and ready for us to make.
Sunday – Salmon with couscous (the couscous had pistachios and cranberries and was ohsogood.)
Monday – Salads (we’re keeping up with meatless Mondays the simple way. Wishing we could go meatless more during the week.)
Tuesday – Rigatoni (think spaghetti, but with rigatoni noodles to change things up a little bit.)
Wednesday – Cajun chicken nuggets with a side salad.
Thursday – Fajitas
Friday – Oven baked barbecue pork chops.
Saturday – Cookout at a neighbor’s house. We’ll bring a side dish to share (which I’m not sure yet what we’ll bring.)
It’s kind of a boring week for us, and I feel like we have a ton going on – but maybe that is because we had such a busy weekend.
Do you have a go-to meal for busy weeknights?
Mmm, I love fajitas! I never make them, though. My go-to meal for busy nights is usually either butternut squash ravioli or breakfast for dinner. Regarding your cookout, I like to take Oprah’s quinoa salad to potlucks.
I think I’m going to have to try that salad! It looks awesome! Breakfast for dinner has also been popular around here. It’s a guaranteed meal for the kiddo, who has been refusing meat lately.
Tonight I threw together coconut chicken strips. Basically chicken breast pieces coated in egg then dredged thru crushed corn flakes & unsweetened coconut. Bake for 12 min or so at 425 I think. The kids dunk theirs in honey.
oh I need to try that chicken. L has been dipping everything in ketchup lately. I bet he’d even try the chicken strips with ketchup. (Sad, but true.)
