I feel like our menu last week was hit or miss. We didn’t plan until after we got home Monday evening and then life happened. We planned our menu this morning and I’m feeling pretty confident about this next week. It’s cool and rainy today (and probably tomorrow), so we’re doing a few comfort foods.
Sunday – cajun chicken and red potatoes. (Recipe for the potatoes is below. I adapted this from another recipe. It’s now a go-to side dish for us!)
Monday – Chili
Tuesday – Salad and possibly chicken (husband is making chicken for some co-workers and there may be some left over when I get home.)
Wednesday – Company beans and rice
Thursday – Spiedies (on the grill, chicken kabobs. I just need to be sure my mom is ok with grilling out for us!)
Friday – salmon and quinoa
Saturday – Probably pizza
5-6 red potatoes, cut into 1-2 inch pieces
1 tbsp. olive oil
1 tsp pepper
Red pepper flakes, thyme and garlic
Toss the potatoes, olive oil, salt and pepper in a large bowl, cover with plastic wrap and microwave for 7-10 minutes. I microwaved for 4 minutes, tossed them potatoes and then cooked them another 4 minutes.
Transfer the potatoes to a skillet. Sprinkle with red pepper flakes, thyme and add garlic (I’m a big fan of garlic, so I used over a teaspoon.) Cook another 5-10 minutes. I cooked mine longer so the outsides were a little crisper.
