menu Monday – healthyyyyy (hopefully)
Menu (planning) Monday is returning for another week! I pre-cooked chicken last night, and we’re determined to eat healthier this week. (Want to see how I pre-cook the chicken? See this post.) My husband and I have both fallen off the healthy-food train and we must get back on asap.
Sunday – SALAD (I actually changed my mind mid-afternoon and decided to do salads because it was so nice out and I wanted to start the week off on the right foot!)
Monday – Chicken fajitas. Vegetables all ready to go!
Tuesday – Spaghetti and meatballs
Wednesday – Grilled chicken and steamed vegetables
Thursday – Something with chicken (I have 3 pounds pre-cooked!) I couldn’t think of a recipe before I went to the grocery store, so I’m hoping something fabulous comes to me by Thursday.
Friday – on the road. Maybe Chick-fil-A? Something somewhat healthy, hopefully.
Saturday – traveling. I think we may be able to cook in our hotel, though.
What’s on your menu this week? Do you have a good chicken recipe I can use on Thursday? And are you on following a healthier menu? (Spring inspires me to be healthier, and it feels like spring at the moment.)
Our menu this week is a lot of “fed for yourself nights” because of conferences and track starting. I’ll be lucky to not gain again because the parent group does our meals on conference nights and it’s rarely healthy.
i’m doing chicken sketti tonight, but since you’re already doing sketti…hmmm…fajitas are a good go-to, but you’ve got those also.
