menu Monday – thinking quick!
We arrived back in town around 3:30 this afternoon, and immediately went to the chiropractor. So we didn’t actually get home until after 4. Around 4:30, I threw together a menu. I had a limited time period to do my grocery shopping and still have a healthy dinner on the table by 6:15.
I’m super excited to say that I only bought what was on my grocery list, I bought a lot of meat (because we had nothing thawed) and I still spent less than $60 on a week’s worth of groceries. (I kind of rock….in my own head, at least.)
Monday – Chicken with tomato juice. Broccoli on the side.
Want a super easy chicken recipe? This is IT! Using a baking dish, put two, four, or even six chicken breasts in the dish. Cover with tomato juice. (I use more than 12 ounces.) Sprinkle with garlic powder, basil and/or oregano. (I used all three tonight.) Bake at 375 degrees for about 40-45 minutes. Done.
Tuesday – Salads. We’re in dire need of salads. We have leftover chicken from Monday, so we may have chicken plus salad.
Wednesday – meatloaf. I’m considering making this on Tuesday night, so we can just reheat it Wednesday. Also, I’m making a second to freeze.
Thursday – Fajitas. It’s Valentine’s Day, so this could possibly change. Right now the plan is to pre-cook chicken and make the fajitas.
Friday – Grilled chicken and a side vegetable. (I keep a lot of steamfresh vegetables in the freezer. I stock up when they’re buy one, get one free at my local grocery store.)
Saturday – Chili
We tend to eat out when we are arriving back in town, so I’m really happy that we started the work week off on the right foot.
Oh and that chicken dish? My child totally ate it up and he’s been really picky lately – especially with chicken. I advise you try it at least once!

i’m definitely going to try that chicken recipe. and maybe put a can of basil/oregano mater in shells and cheese. mmmmmmmmmmmmm….
