menu planning: chicken, pork and pizza!

Posting this early because…well, because we plan our meals from Sunday through Saturday and I wanted to throw all of this out there.

I pre-cooked chicken again this week. I actually got a great deal yesterday on organic/free range chicken, so I bought several packages and figured we’d use most of it. (I froze the rest.) We’ll have chicken in meals at least 3 times this week.

Sunday – Chicken Pot Pie (the Weight Watchers recipe.) I love this recipe. It takes a while to prepare, though, so we tend to make it on a weekend night or one night that one of us has an hour to work on dinner. We make ours without mushrooms. And it makes 6 servings, so we have leftovers for lunch for two more days.

Monday – Rosemary-crusted pork tenderloin – Another tried and true recipe. I bought the tenderloin from a local farmer. I also decided this past weekend that I’m going to grow my own rosemary to dry.

Tuesday – Salad!

Wednesday – Pita pizzas. I’ll use chicken and barbeque sauce on mine and the husband’s pizzas. I’ll make a “normal” cheese pizza for the kiddo. He requests pizza every SINGLE DAY. Hopefully he’ll enjoy these.

Thursday – breakfast for dinner. Pancakes and turkey bacon will be dinner that night. This might be my most favorite dinner this week.

Friday – spaghetti

Saturday – Open. (We have stocked up on a few pizzas from Trader Joe’s, so we have those as a back-up.)

  1. I’m making a new recipe tonight – Lasagna Soup in the crock pot. It smelled really good when I was home for lunch (and considering how clogged my nose is, it must smell REALLY good to break through all the gunk). I hope it turns out.
