menu planning…cold weather edition
This Polar Vortex has been no joke. Except for Sunday when we reached the upper 40s and I thought it was summertime. My husband is feeling the effects of the cold weather and it’s reflected in his menu this week. (Oh and he wanted chili just about every night and I managed to put a stop to that.)
On Saturday, we didn’t have a clear plan, so I thawed out the three-bean chili we had made last week (and frozen for a later week.) Also, one day last week, we were supposed to have the vegetable beef stew, but I had forgotten to thaw the meat the night before. We ended up eating gnocchi and a vegetable. I need to remember to buy more gnocchi for last-minute meals. It’s one of the few things that ALL of us eat, including the toddler.
This week’s menu:
Sunday – chili mac. The start of the chili. Also, I can’t find the recipe.
Monday – Vegetable beef stew. This was a carryover from last week. (And last week, I subbed in gnocchi one night.) This was prepped on Sunday night and will cook all day so we can have a tasty, easy, fast dinner tonight.
Tuesday – Tilapia and broccoli. This is clearly a use-what-you-have meal. We’ve been trying to clear out the freezer. We’re doing a good job.
Wednesday – Three bean and pork chili (slow cooker recipe)
Thursday – Chicken noodle soup. My husband was clearly feeling sick last week and bought a case of soup at Sam’s Club. Yum, yum. (Insert sarcasm font.)
Friday – Pizza.
Saturday – Eat in month is over, sooooo…will we eat out? Just maybe!
I love Eat In Month, especially since I haven’t paid since December 20 and this has really helped me curb my dining out budget (since I basically haven’t dined out all month.) We’ve definitely tried new recipes and I hope we do this challenge next year (if not sooner.)
