menu planning in July

I bought in bulk a lot this weekend and I’m hoping that it pays off for us. Today I shopped at Sam’s Club, which I rarely do for a lot of items at once. I bought spinach, hummus (from a local business who happened to partner with our club to sell it), an enormous bag of mixed vegetables (instead of chips for the hummus) as well as snack items for the kiddo (goldfish and graham crackers.) I bought some fruit items as well. I’m hoping this will keep us on the healthy track this week AND I know I have snack items for several weeks, saving us a little bit of money.

Now onto our menu. 

Sunday – Spinach and apple salad, with a side of potatoes (using the recipe from last week.) We made the potatoes because we still had some left over and didn’t want them to go to waste. I made whole wheat pizza for lunch and we tried to keep it light(er) for dinner.

Monday – Ribs. I normally don’t (read: have never) buy ribs, but they were super on sale this past week, so I picked up 3 pounds for under $6. My mom is planning on grilling them Monday afternoon. I picked up corn at the tailgate market on Saturday, so we should be set. The ribs plus corn cost me less than $8. I’m pretty excited about that!

Tuesday – Spring chicken salad (Tupelo Honey recipe for the dressing.)

Wednesday – Company beans and rice

Thursday – Salmon. I’m not 100% sure which salmon recipe we’ll use, but I had a coupon from Earth Fare for salmon and bought two pounds of it on Friday night. We got the salmon for 50% off, so another super great sale.

Friday – Tacos! (I bought at taco kit when it was on sale over a week ago. Trying to use what we have now.)

Saturday – Leaving this day open. We may do breakfast for dinner.

I bought a waffle iron at a yard sale for $3 on Saturday. It works great, and I think it might save me some money with all of the waffles I buy these days (at least two boxes per week.) I tend to buy a really good, expensive brand because they taste better and I was pleasantly surprised to find that the waffles we made last night were amazing (and the kiddo loved them.)
