menu planning Monday
I’ve seen a couple of other bloggers menu plan and post their menus (with links to recipes – very helpful) and thought it would be fun to do that today. And I really meant to do this before I started watching Gossip Girl this evening, but life happens. I’m here now, and that’s all that matters, right?
It’s no secret that we menu plan. And we try to grocery shop only one day a week. It saves us time and money in the long-run. We’ve been doing this for several years.
I checked out the new Weight Watchers program (PointsPlus) on Saturday. It’s interesting, and I think I’ll grow to love it (it focuses on fruits, vegetables, for once!) but it’s going to take some time to get used to it. My points have increased by 10, points values for food have changed, and I’m afraid it might take me a couple of weeks to get the hang of it.
That said, I tried to plan a healthy menu for the week. So let’s get this party started.
Sunday – chicken baked in tomato juice, vegetable
Monday – Spaghetti (whole wheat) with meatballs (that I made Sunday night to save 45 minutes this evening.)
Tuesday – crock pot vegetable beef soup
Wednesday – Spinach and walnut salad
Thursday – Chili (in the crock pot!)
Friday – leftovers
Saturday – out. We have a dinner and party we’re supposed to attend.
And let me just share a quick recipe – the chicken from Sunday night. All you need is four or five chicken breasts and a can of tomato juice (we buy tomato juice in a large bottle so I can use a little more.) In a pan, pour the tomato juice over the chicken breasts. Sprinkle oregano, basil and garlic powder over the chicken. Bake for 45 minutes on 350 or 375 degrees. For a side, you can do pasta, and pour the tomato juice over the pasta for added flavor. Though, we’ve been going away from the pasta and eating more vegetables. Super simple to make, and it’s so good!
