Menu planning Monday – the comfort food edition
Sometime in the past 48 hours, fall hit us. Hard. We spent Saturday in the mid-80s (on the coast of NC) and by the time we got home yesterday afternoon, the high of 54 had already been reached. Today’s high was 50 degrees.
We celebrated my birthday with lasagna last night (yay for mom’s lasagna!) and today I quickly came up with a menu for the week and did the grocery shopping. My goal for the week was to cook as healthy as possible, not break the bank at the grocery store, and throw in several comfort foods for the cooler-than-normal week. So without further ado…..our menu.
Monday – Chili. I had hoped to do a slow cooker chili, but in the end, I threw one together in about 20 minutes. (One pound of beef, one can of diced tomatoes, one can of kidney beans, one packet of chili seasoning. That’s all it took.)
Tuesday – Soup and grilled cheese sandwiches. (Quick, and comforting. I have my photography class this night.)
Wednesday – Spinach and apple salad
Thursday – Grilled chicken, frozen vegetable. Again, quick. I will more than likely be at work late this night, and my husband has a later than normal day on Thursdays.
Friday – Homemade pizza (with this pizza crust)
Saturday – open.
I did buy a few seasoning packets for the slow cooker, and we have extra chicken in the freezer. At the moment, we’re not planning on going out Saturday, but that can always change.
What are you making this week? Any comfort foods you recommend for the cold weather?
Have you tried Alton Brown’s Pressure Cooker Chili? It’s so good!
