menu planning Monday – the quick edition

A few things got moved around last week, and bumped to this week. I’m happy to say that I ate dinner at home each night. I only ate out once (lunch on Saturday, with my mom, and I had a discount card so it wasn’t terribly expensive.) So impressive, considering I was on my own from Thursday through Saturday!

On Saturday, I made out our menu and did grocery shopping with a 13-month-old who insisted on saying “hi” to every person in the store. This is what we came up with:

Sunday – pumpkin pancakes, turkey bacon – moved from Saturday. (The recipe makes about 16 pancakes, and it would have been wasteful to make them for just myself.)

Monday – Fajitas – we have peppers that need to be used. And this is quick.

Tuesday – Spaghetti

Wednesday – Salads

Thursday – Grilled chicken (marinated in Chiavetta’s Italian dressing) with a side vegetable

Friday – we’ll be traveling, so either Subway or Wendy’s. I plan on grilling chicken for the baby to eat over the weekend, in addition to his fruits and vegetables.

Saturday – still traveling, and lunch will be at a family reunion.

Sunday – my birthday. I’ve requested lasagna (from my mom.)
