menu planning Monday
We plan our meals each week, but I don’t often post them because they are pretty similar meals from week to week. This weekend, I was reading a couple of magazines (because I had several hours in the car – so I had time to read!) and I came across a few recipes I want to try. I’m hoping that this will help get us out of our standard “grilled chicken and vegetable” rut.
Sunday – baked chicken, potatoes, vegetables (this involved a whole chicken, which we don’t do often.)
Monday – Turkey-cheddar melts from the Sept-Oct. 2012 Weight Watchers magazine
Tuesday – Salad (I have photography class this night, so dinner has to be quick and simple)
Wednesday – Chicken, with a rotisserie seasoning. Side: salad or possibly sweet potatoes. We’ve got vegetables to eat before they go to waste.
Thursday – Pesto spaghetti, possibly with chicken. I have a colander filled with basil, so I’m making pesto this week. (I’m also on my own Thursday through Saturday, so I’m making my favorite dishes!)
Friday – pasta a la caprese. YUM. We also happen to have the last of our tomatoes ripening, so this will be perfect.
Saturday – breakfast for dinner – and I’m making pumpkin pancakes! I’ll also be making turkey bacon. And mimosas, if I’m lucky.
