Peanut Butter Vanilla Protein Bars Recipe
These peanut butter vanilla protein bars are simple, delicious and made with just a few (healthy!) ingredients. Make more than one batch to keep on hand for the whole family!
We’ve been staying home for almost two months and we are feeling every single day of it. The most common question in my house right now is “can I have a snack?” and despite creating a snack bin for the kids, it never seems to be quite enough. I honestly don’t know how my children survive school without a snack bin to keep them fed throughout the day.
I want to give my son some credit. He’s often looking for the snacks that are going to fill him up. (Hint: those snacks are not popsicles or fruit chews.) These Peanut Butter Vanilla Protein Bars are simple enough for his picky taste buds, but filling enough that he’ll go at least an hour without asking for a snack.
Ingredients for Peanut Butter Vanilla Protein Bars
- 1 cup oats
- 2 scoops vanilla whey protein powder
- 2 tablespoons coconut oil, measured solid
- 1/2 cup natural, smooth peanut butter
- 1 tablespoons raw honey
- 1 tablespoon vanilla extract
- 1/8 cup almond milk
How to make the protein bars
In a medium bowl, combine oats and protein powder.
In a small bowl or pot heat the coconut and peanut butter slowly until coconut oil is melted. Remove from heat. Whisk in the honey and vanilla until everything is combined and smooth.
Pour the peanut butter mixture into the oat mixture and mix with a fork until it looks sticky but crumbly.
Very slowly, add in the almond milk and mix until everything is combined and holding together.
Line an 8×4 baking pan with parchment paper. Place the mixture into the pan and use another piece of parchment paper to press the mixture down evenly.
Place in the freezer for thirty minutes to set.
Remove and let thaw for five minutes before cutting into bars.
Makes 5 bars.
Hi there! Thank you for sharing your recipe. I am wondering what kind of oats did you use? Did you use instant oats or rolled oats? I am not really an oats person so I am not sure which type to pick up!

I normally do rolled oats because I can buy them in bulk, but from what I’ve read, the quick and rolled oats are fairly interchangeable. They’re different textures, though.
That’s really good to know thank you so much! And how do you store them after? Do you still refrigerate it or can I leave it out?

I put them in an air tight container and usually will store in the refrigerator.
