Peeps Marshmallow Chocolate Chip Cookies

I learned years ago that you’re either Team Peeps or Team No Peeps – there’s no in-between. If you’re on team Peeps, this recipe for Peeps Marshmallow Chocolate Chip Cookies is going to be just what you need this Peeps-eating-season.

While Peeps are generally thought of for Easter treats, they have really upped their game for other holidays. These Peeps Marshmallow Cookies are fun and use any extra Peeps bunnies you have. You can make a couple of batches using different color Peeps!

My kids received Christmas Peeps a couple of months ago, which is why I think these really could be a mult-holiday treat. (Another use of Peeps? S’mores! I’m not kidding when I tell you we have roasted Peeps before.) This recipe tends to work better with the Peeps bunnies, but those aren’t always available.

Ingredients for Peeps Marshmallow Cookies:

  • 2 1/4 C unbleached all purpose flour
  • 1 TSP baking soda
  • 1 TSP salt
  • 1 C butter (2 sticks)
  • 3/4 C granulated sugar
  • 3/4 C packed brown sugar
  • 1 TSP vanilla
  • 2 whole eggs
  • 2 C semi sweet chocolate chips
  • 12 whole Peeps bunnies – they will work better than the chicks
  • Sprinkles in Easter (pastel) colors

How to make Peeps Marshmallow Cookies:

  • Place your butter and sugar in a mixing bowl.
  • Cream the butter on medium speed for approximately three minutes, or until mixture becomes light and fluffy.
  • After stopping your mixer, stir in the eggs and vanilla.
  • Set the mixer to low speed and mix until blended, scraping the bowl when necessary.
  • In another bowl, combine the flour, baking soda and salt. Stir to combine.
  • With the mixer on low, slowly add in the flour mixture to the mixing bowl.
  • Continue mixing until the flour mixture has been blended well.
  • Stop the mixer and fold in the chocolate chips.
  • Take about an inch in diameter amount of dough, wrap it around one of the Peeps bunnies completely. Make sure that none of the Peep is showing.
  • In a bowl with the sprinkles, roll the dough ball in the sprinkles. Place on a baking sheet.
  • Place cookies six on a sheet and fairly far apart as cookies will spread.
  • Bake at 350 degrees for 18-20 minutes or until lightly browned.
  • Remove from the oven and allow to cool for several minutes before moving to a cooling rack to finish cooling completely.

What else can you do with Peeps?

  • Roast them – they are great when you don’t have other marshmallows on hand!
  • Add them to hot chocolate.
  • Use them in Rice Krispies treats.
  • Use in place of marshmallows in a lot of baking recipes.
