Pumpkin Pie Smoothie with my Vitamix Personal Cup Adapter

A few months ago, I received a Vitamix through Moms Meet (and it’s amazing, by the way.) I wrote about it before summer, and it needs to be talked about again. This month I received a Personal Cup Adapter and it’s pretty life changing.
With the Personal Cup Adapter I can make smoothies or shakes – and it all gets mixed and blended in one cup. I don’t have to pour it into another cup unless I want to. I can even make nut butter with the Vitamix Personal Cup Adapter.
I mean….what?? It’s the craziest, coolest thing. Along with the Personal Cup and Adapter, I received a cup of peanuts which in a minute I turned into peanut butter. And it tastes amazing. (Think of all of the food goodness I can gift at the holidays! The options are plentiful!) I simply placed the peanuts in the cup, added the adapter to the top, flipped it over and set it on the Vitamix base, and turned the machine on. I started at the lowest setting and worked my way up, but with this amount of peanuts it took very little time to somewhat liquefy and become a creamy peanut butter. Then I scraped it back into a glass jar and sealed it until I was able to consume it.
I’ve shared several smoothie and shake recipes on the blog and I was feeling something fall-ish this month. Fall is my favorite time of year, so it’s only fitting that I decided to try my hand at a pumpkin pie smoothie!
Pumpkin Pie Smoothie
What you need:
1/2 cup of milk
1/4 cup vanilla yogurt
1/4 cup pumpkin (NOT pie filling, but legit pureed pumpkin)
1 banana
1/4 tsp cinnamon
6-8 ice cubes
sprinkle of pumpkin pie spice
graham cracker crumbs to sprinkle on top
Instructions:
Starting with the milk, add everything to your Vitamix Personal Cup. Attach the adapter to the top of the cup, then flip over and place on the Vitamix base. Mix with the Vitamix until smooth and mixed.
So I could show you a better view of the smoothie, I poured it into a glass, but you could take thea dapter off, and place the cup lid on (just like a shaker bottle) and drink your smoothie on the go! I sprinkled the graham cracker crumbs on top and this is SO yummy. Just like pumpkin pie, minus the whipped cream (and the full crust.)
