Recipe: Pasta with spinach and Klement’s bratwurst

I was looking for a recipe that would be easy and summer-like, but still have protein. Some of my favorite recipes are all pasta, and no meat. That’s my husband’s biggest complaint when it comes to dinner – if there is very little protein, he’s going to be hungry quickly.
I think I made everyone happy with this dish. Penne pasta with spinach and Klement’s bratwurst. The meal took 20 minutes to prep and cook, which is really so little time in my house.
Ingredients:
Penne pasta
2 cups fresh spinach
1-2 cloves Garlic
1/4 cup pine nuts (or walnuts)
Klement’s pre-cooked bratwurst
1 tbsp. olive oil
Cook the pasta according to directions on the box. In a saute pan, cook the pine nuts and garlic in the olive oil until the pine nuts begin turning brown. Add spinach, and cook until all of the spinach is sauteed. Microwave 1-2 bratwurst for about 2 minutes (you can also grill them. Follow instructions on the package.) When pasta is cooked and drained, add the spinach to the pasta. Slice the bratwurst and mix in with the pasta and spinach. Sprinkle with mozzarella cheese, if desired.
In keeping with the theme of my life, this recipe had to be simple. And quick. I have a baby whose fussiest hour is the dinner hour. I managed to pull this off while she was playing happily (for the moment) on her activity mat. We’ve been eating the bratwurst for the past couple of months and they’ve gone over so well with my husband (and even my brother!) For this recipe, I used the smoked bratwurst from Klement’s.
