Earlier this month, my husband asked the kids if they wanted to get donuts from our local donut place. Of course they did. We loaded up in the car, drove over there and learned that they had closed at 6pm that evening. (It was 6:25pm when we arrived.) We ended up at the grocery store grabbing a few donuts from the bakery section and it just wasn’t the same.

My family LOVES strawberry (usually frosted) donuts. If given the option between vanilla, chocolate or strawberry donuts, they will more often than not choose a strawberry donut.

I don’t always love baking things that require extra tools – like a donut pan. But these donut holes? I can get behind them. They take less than 15 minutes to prep, less than 10 minutes to bake, and in under 30 minutes you could be well on your way to eating strawberry donut holes. No wasted trip to a donut place, only to find out they are closed early because of staffing shortages.

Ingredients for the Batter:

  • 1 cup flour
  • 1 tsp baking powder
  • 1/3 cup white sugar
  • 1/4 cup almond milk (or any kind)
  • 1/4 cup Greek yogurt or regular vanilla yogurt
  • 1 egg
  • 2 Tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 tsp almond extract

Ingredients for the Glaze:

  • 1/8 cup strawberries, pureed (about 3 big strawberries)
  • 2-3 cup powdered sugar
  • 1 Tbsp heavy cream

How to make strawberry donut holes:

  • Preheat the oven to 350.
  • Grease a 24-cup mini muffin tin.
  • In a large bowl, mix flour, baking powder, and sugar together.
  • In a second bowl, mix melted butter with milk, almond and vanilla extracts, egg and yogurt.
  • Make a well in the center of the dry ingredients, and pour the wet ingredients into the well.
  • Stir gently, until just combined. Batter will be thick.
  • Disperse batter into muffin tins evenly, about 1/2 to 3/4 of the way full.
  • Bake for 7-8 minutes or until golden brown.
  • To make the glaze, puree strawberries in a blender or food processor.
  • Mix with cream and 2 cups of powdered sugar, adding an additional cup of powdered sugar if
  • the consistency is too runny.
  • When it comes to making icing,
  • it really depends upon personal preference if you want a stiff or a softer glaze.
  • Dunk donut in the glaze.
  • I dunked the whole thing, but you could also just dip the tops.
  • Allow glaze to set before doing a second coating.
