Simple Tomato Juice Baked Chicken (and easier clean up)

Easy dinners are my jam. If the dishes are few and easy to clean, I’m even happier. I’ve picked up some recipes over the years, but I have a few go-to recipes my mom made – or had my brother and I cook – when we got home from school. One of the recipes was a tomato juice chicken that my family enjoys now. The recipe is one dish and prep time is minimal.
While I LOVE this dish, if the tomato juice burns to the pan, it can be a pain to clean. I recently found the new Scotch-Brite® Scrubbing Dish Cloths at Target and fell in love! One side of this cloth is great for scrubbing hard stains, while the other side is a quality cloth. I’m also a fan of the colors. Who says dish cloths need to be boring colors? I used the scrubbing side of the cloth on the baking dish and it worked great!
This new dish cloth can handle counters and tough stains on my stove as well. Cleaning my kitchen shouldn’t be such an issue, but in trying to remember everything I need to do, I needed a list. One with daily things to keep track of and one that keeps track of weekly tasks.
To better keep things in order in my kitchen, I made this handy chart so I can keep track of everything I have to do in there. I used one half of my chart for menu planning. I simply printed it and will run it through my laminator, so I can use a dry erase marker to keep track of everything. If you want to print this every week, you can. (Print your own chart here!)
The goal each day is to make sure there are no dirty dishes on the counters. The stove needs to be wiped down (which Scotch-Brite® Scrubbing Dish Cloth can help with!) and the counters should be clear. Weekly, the microwave needs to be cleaned out, the floor mopped and the refrigerator cleared of old leftovers. All of this is reflected in the chart, and there are two places to write in your own items.

Tomato Juice Baked Chicken
This simple tomato juice baked chicken is only five ingredients and bakes in less than an hour.
Ingredients
- 2-4 chicken breasts
- Tomato juice (enough to cover the chicken)
- Garlic powder
- Oregano
- Basil
Instructions
Preheat oven to 350 degrees. In a baking dish, place chicken and pour tomato juice over the chicken until it's covered. Sprinkle garlic powder, oregano and basil on the chicken. Bake for 40-45 minutes.

Those look like great wipes! I’d say my biggest kitchen tip is to never go to bed with dishes in the sink. It’s kind of how I stay on top of the mess.
