What to do with all of your tomatoes – Meal planning summer edition
Remember when I planted my garden this spring? Well, it’s been doing well minus the critters that are trying to tear it down. My tomatoes are finally ripening (I feel like everything has been really behind this summer.) I can’t be the only person asking wondering “what to do with all of your tomatoes?”
Now that the tomatoes are starting to ripen, I’m finding that I have an overabundance and that’s definitely showing in our menu this week! Also? I’m lucky my mom and grandma have a lot of zucchini and cucumbers. While I’m getting cucumbers in my own garden, critters are eating a lot of them. (I am lucking out with jalapenos, peppers and some of my herbs. I’ll have to get back to you on my carrots!)
Let’s see what we’re eating this week, shall we?
Sunday – Company Beans with Rice (using tomatoes and zucchini!)
Monday – Pasta a la Caprese (again with the tomatoes)
Tuesday – Taco Tuesday! (Tomatoes! Also, guacamole or homemade salsa, if the avocados are not ripe yet.)
Wednesday – Slow Cooker Rotisserie Chicken – with grilled zucchini for a side
Thursday – Chicken Spiedies
Friday – Hamburgers – and adding tomatoes to the burgers.
My husband is actually traveling for a few days, so the easier the better for me this week. And I need something both of my kids will love. (My son actually doesn’t love tomatoes, so I’m making things that he can eat around the tomatoes. It’s all good. My daughter loves them, and I’m feeling good about how things are looking right now.)
